If you do not have simple syrup to hand, put your sugar in a small pan and pour the water over it. Bring this pan to a boil, stirring gently, and simmer for about 1 minute - until the sugars have dissolved.
Once dissolved, add lime juice and set aside to cool. Once cool, add to your shaker.
Pour your Ouzo into your shaker, followed by your OGGS Aquafaba and 5 or 6 ice cubes. Shake this mixture hard for 30 seconds, with the lid on of course!
Fill two small tumblers with ice cubes. Strain drink into the sour evenly over the two classes. It should be nice and foamy!
Add a few drops of bitters into each glass and a lime to garnish!
