Pre-heat the oven to 160 degrees C.
Combine your flour, baking powder, baking soda and salt in a bowl.
Zest your lemon and add the zest into your dry ingredient bowl.
In a stand mixer, add in your soft butter and 230 grams of sugar. Mix well until fluffy and combined.
Add in one egg and one egg yolk, along with half the juice of your lemon and your food coloring if desired. Mix well.
Once combined, add in your dry ingredients slowly until combined.
Place the icing sugar in a bowl and the three spoons of sugar in another bowl.
After the dough is mixed, take a spoonful of the dough and roll it in your palms to make a ball.
Roll the ball into your white sugar bowl to coat.
Move the ball to the icing sugar and do the same. Then place it on a baking tray lined with parchment paper.
Bake in the oven for 15 minutes, until edges are slightly browned.
Let cookies cool on the tray for at least 10 minutes before moving to a drying rack to finish cooling.
