Mini Egg Cookies

Ingredients

  • 150 grams butter softened
  • 80 grams light brown sugar
  • 80 grams white sugar
  • splash vanilla
  • 1 egg
  • 25 grams flour
  • 1/2 tsp baking soda
  • pinch salt
  • 200 grams Mini-Eggs plus extra for topping

Instructions

  • Pre-heat your oven to 190 degrees Celsius
  • Add your butter and sugars into your stand mixer. Beat until creamed together.
  • Add in your vanilla extract and egg, beat for a moment longer until combined.
  • Add in your flour, baking soda and salt, slowly, while it's mixing.
  • While it's mixing, beat up your Mini Eggs with a rolling pin.
  • Add your Mini Eggs to the bowl and combine.
  • Ball out your cookies - they will spread quite a bit - and put them on a lined baking tray.
  • Press a Mini Egg or two into the top of each cookie.
  • Bake for 10 minutes, until golden brown.
  • Allow to cool on the baking sheet before transfering to a plate!
