Pre-heat your oven to 190 degrees Celsius
Add your butter and sugars into your stand mixer. Beat until creamed together.
Add in your vanilla extract and egg, beat for a moment longer until combined.
Add in your flour, baking soda and salt, slowly, while it's mixing.
While it's mixing, beat up your Mini Eggs with a rolling pin.
Add your Mini Eggs to the bowl and combine.
Ball out your cookies - they will spread quite a bit - and put them on a lined baking tray.
Press a Mini Egg or two into the top of each cookie.
Bake for 10 minutes, until golden brown.
Allow to cool on the baking sheet before transfering to a plate!
