Pumpkin Pancakes

Ingredients

  • 2 cups Flour
  • 3 tsp Baking Powder
  • 1 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/2 tsp Ground Nutmeg
  • 1/4 cup Brown Sugar
  • 1/4 cup Sugar
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 2 Eggs
  • 4 tbps Melted Butter
  • 1 1/2 cup Milk

Instructions

  • In a large bowl, whisk together flour, baking powder, salt, cinnamon, ginger and nutmeg.
  • Add in sugars, vanilla, pumpkin puree, eggs, melted butter and milk.
  • Wisk until well combined.
  • Set batter aside for 5 minutes.
  • Pre-heat a non-stick pan with a bit of butter.
  • Using a big spoon or ladle in enough to form your pancake.
  • Once you see bubbles on the top of the pancake, flip for a few more minutes.
  • Serve with whatever toppings you like.
