Savory Sausage Oatmeal

Ingredients

Oatmeal

  • 1 cup Rolled Oats
  • 2 cups Water
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Sausage

  • 1/2 tbsp Olive Oil
  • 1/2 Onion
  • 2 Cloves of Garlic
  • 1/2 lb Spicy Sausage - or whatever sausage you enjoy!

Sauce

  • 1/2 cup Roasted Red Peppers (Jarred is fine)
  • 1 tbsp Tomato Paste
  • 1 Clove of Garlic
  • 1/2 tsp Paprika
  • 1/4 tsp Cayenne
  • 1 tbsp White Wine Vinegar
  • 1/2 cup Pine Nuts

Toppings

  • 4 Fried Eggs
  • Freshly Chopped Parsley

Instructions

  • Add your oats, water, and seasonings into a large saucepan over medium heat.
  • Once the pot starts to bubble, turn it down to a simmer and cook for 10 minutes, stirring occasionally.
  • While your oats are heating, chop your onion and add some oil to a pan over medium heat.
  • Once your pan is heated, add in the onion and cook for 2 minutes, until soft.
  • Add in your garlic and cook for another minute. Then add in your sausage and break it up in your pan. If your sausage had casings, you will want to remove these casings.
  • Cook until meat is fully done, about 10 minutes. Then set aside off the heat.
  • In a blender or food processor, combine your red peppers, tomato paste, garlic, paprika, cayenne, vinegar and pine nuts and process until smooth.
  • Fry up your eggs either in the sausage drippings or a bit of olive oil or butter.
  • Split the oatmeal between four bowls, then top with chorizo mixture, sauce, eggs and chopped parsley.
