This is one of those recipes where you want to get your prep done first! Take your onion and peel it, then slice it. Set asside.
Peel and dice your potato, dice your courgette. Smash your garlic cloves.
Grab a medium sized pot and heat your coconut oil on medium heat. Add your onion and garlic and cook for a few minutes.
Add in your ground paprika and continue cooking for about a minute, until fragrant.
Add in your potato and courgette, as well as the stock and bring the soup to a boil.
Once at a boil, cover the pot and simmer for about 15 minutes.
Now that everything is cooked through, you can process your food using a food processor or stick blender.
Use your fresh parsley and soya cream to garnish the dish.
