Chocolate Mint Cookies Recipe

[Ad – Gifted Products] I feel like this time of year is when everyone is baking! One of the things my family has always done is cookie trays, which are gifted to everyone. Following the same sort of spirit, I create smaller cookie boxes for my in-laws, neighbours and Pokemon Go community. Last year I shared our Chewy Lemon Cookies Recipe, which is still a big favorite, and previously I shared our Hazelnut Melting Moments Cookie recipe as well. This year, I made some chocolate mint cookies with Organic Cocoa Powder from Food Thoughts. This cocoa powder is 100% natural, without any added sugar, making it perfect for baking as you do not need to worry about adjusting the sugar level.

Chocolate Mint Cookies

Deeply chocolate, chewy, and a bit minty

Ingredients

  • 170 grams unsalted butter softened
  • 300 grams granulated sugar
  • 2 eggs
  • 1 tablespoon peppermint extract
  • 260 grams flour
  • 60 grams cocoa powder unsweetened
  • 1 teaspoon baking soda
  • 1 pinch salt

To Decorate

  • 1 bar white chocolate
  • 1 container holiday sprinkles

Instructions

  • Preheat your oven to 175 degrees Celsius
  • In your stand mixer, with the paddle attachment, beat together butter and sugar on medium speed until creamed together.
  • Add in the two eggs, one at a time, and allow them to mix in fully.
  • Add in your peppermint extract.
  • Combine your flour, cocoa powder, baking soda and salt in bowl.
  • Add your dry ingredients to the mixer, slowly, combining them all. You will need to scrape down the bowl to ensure it all combines.
  • On a parchment lined baking tray, scoop out blobs of the cookie dough, evenly spacing them out.
  • Bake for 9 minutes, until the edges are crispy and the top looks no longer wet.
  • Allow cookies to cool. If you'd like to decorate, melt your white chocolate and add to a piping bag.
  • Pipe stripes to one side of the cookie and add on the sprinkles.

Now, our Chocolate Mint Cookies come out very chewy, which is exactly how I like my cookies. If you want them more toothsome, you can bake them for longer. You might want to make sure they cool in their tray, so that they do not fall apart when moving them to store them! These cookies did spread a bit more than I expected, which I do think is due to an oven issue, as all of my cookies for the last 3 years have come out a little flatter than expected, and our oven doesn’t seem to be super even at cooking. I do not bake often, so this isn’t something that ever becomes a big pain.

The Food Thoughts cocoa powder adds a very rich, chocolate flavor that feels perfect with the mint extract, creating a great treat for the holiday season. I decorate mine with white chocolate and fun sprinkles, but these cookies could also be dipped in chocolate or left without any sort of decoration, for more of a classic, dark cookie look. Either way, it’s delicious!
