When it comes to wintertime, one of the fondest memories I have from when I was a child was creating cookie trays with my grandmother. Though there were tons of gingerbread cookies and sugar cookies that you can decorate, my favorite to eat was always these Hazelnut Melting Moments cookies, which are crumbly, hazelnut cookies with chocolate! They are a bit less moist than other cookies, and feel like they go great with hot chocolate or other warm drinks. This recipe was actually written by my grandmother herself!
Hazelnut Melting Moments Cookies
Ingredients
- 1 cup Butter soften
- 2/3 cup Sugar
- 1 tsp Lemon Peel grated
- 2 tsp Vanilla 2
- 2 1/2 cup Flour
- 1 Egg Yolk
- 1 cup Chocolate Chips
- 1 1/2 cup Ground Hazelnuts
Instructions
- In a large bowl (or a stand mixer) beat butter and sugar until light and fluffy
- Add vanilla, lemon peel and egg yolk. Mix well
- Lightly spoon flour into measuring cup and level off.
- Mix in flour and ground hazelnuts
- Shape dough into 1 1/2 inch balls. Place 2 inches apart on an ngreased cookie sheet
- Make an indent in each ball with your thumb, creating a pool in the centre
- Bake your cookies at 325 degrees F for 10 to 15 minutes, until light golden brown around the edges.
- Melt chocolate chips in a microwave or on the stove top in a double boiler.
- Spoon about 1/2 teaspoon melted chocolate into the center of each cookie sheet.
- If you have leftover hazelnuts, you can roast them in the oven for 8 minutes (until skin cracks) and chop them up to decorate the chocolate with.
You can store these cookies in an air tight container for about a week. They are really delicious, especially if you like nuts and chocolate. I always enjoy them, and the recipe makes plenty of them to share with your friends and family.
omg these hazelnut cookies!!! They looks sooooooo good!!! I can’t wait to make your recipe, can’t wait.
This looks so delicious! I definitely think that chocolate is a must in a cookie, especially when it’s added like this. Yum!
