It’s another week of meal inspo, from random American recipes, to old classics, to fun foods that we have enjoyed. A lot of these meals were super quick – we are in our quick food era, and all of them are very filling as their own items. Side dishes are something I do feel I need to have more inspo for lately!
Chicken Parm Sliders
When I was at Costco, I saw the Hawaiian rolls that use to be super popular on social media! I was super excited, so grabbed some. We used a rotisserie chicken, shredded and mixed with some jarred tomato sauce to create these chicken parm sliders. I then placed them into the bread, added some mozzarella on top, and based the top of the bread with some butter, garlic powder and Italian seasoning. These were then baked until toasty! It felt very American, and we all really enjoyed them. I also served a side salad.
Chicken Fajita Quesadillas
We do quesadillas from time to time, but wanted to make them more filling for dinner. I cooked up some chicken breasts, shredded them, and added them, and mixed in some pan-fried bell peppers. I also added in fajita seasoning. Then, took tortillas, sprinkled on cheddar cheese, and added in the filling. These were served with guac, salsa, hot sauces, and some boiled beets. This is one of our staples, really.
Egg Roll in a Bowl
Egg roll in a bowl was back on the menu! This is a minced pork dish, with cabbage, peppers, grated carrot and onion fried up with it. For the sauce, we added in grated garlic, some soy sauce, and sesame oil. I served this over rice, with spring onions from our garden (still going strong) and sesame seeds. It’s easy, filling and delicious.
Potato Waffle Burgers
We had some friends over so made chaos burgers. These were cheese burgers inside a potato waffle bun! It’s so fun to have something a little bit different. I did vegetable sticks and tortilla chips on the side, along with more potato waffles. This went down well with all of the children and was so easy to make too.
Batter Fried Fish
I must say, I love it when Amelia cooks dinner! She is at an age where when she asks to make battered fish, she then just goes into the kitchen and makes it. This was a beer batter that was equal parts beer and flour, in weight, along with some chives. She fried sea bass in vegetable oil, and it was served with sweet potato and the rest of the beets. I also had some tartare sauce on the side of mine.
