Midweek Meal Inspo; Katsu Chicken Curry, Tofu Rice Bowls, Lasagna Soup and More.

This week, we had a bit of a rice theme going on, primarily because my father-in-law dropped off a huge bag of rice and it doesn’t fit in our kitchen, so it’s been on the side and I have been looking at it. We also focused a bit more on quick meals, as it’s the summer holiday and we have a lot of plans that take us out of the house and enjoying our time together. These meals are all pretty quick and easy!

Chicken Burritos with Onion Rings

Kai seems to be pumped about making Mexican food, so we had some burritos this week – which were not very fun to photograph to be honest! These burritos had chicken in it, rice cooked with a chicken stock cube, salsa, cheese, guac, refried beans, and sour cream. We served them with some of the leftover chicken rice and onion rings for a fun Friday night meal!

Lasagna Soup

Our Lasagna Soup does feel a few steps away from Lasagna Soup that I have had before, but it’s the best way to make it really. We take our favorite sausages and fry them in a pan with onions, breaking them up while they cook. We then add them to a stock pot with two cans of crushed tomatoes, some water, two chicken stock cubes, bay leaves and Italian seasoning and let that all cook together on low until we are back from wherever we have been that day. We then cook up some pasta separately in a pot (some people use broken lasagna sheets), and mix up some cheese mixture. This cheese mixture is a handful of parm, a block of mozzarella, and a pot of ricotta. We then add the pasta to our bowls, add over the amount of soup we want, and then add in a spoonful of the cheese mixture. This really tastes just like lasagna!

Katsu Chicken Curry

One of Robin’s favorite dishes, Katsu Chicken Curry is chicken, breaded in panko, fried and then baked to cook all the way, along with rice and Japanese curry. You can get the curry stock cubes for this at places like Tesco now and they are very easy to actually cook up. We fry up some carrot, onion and potato, add water, and then when these veggies are soft we add in the curry cubes and let it all thicken up!

Carbonara

Carbonara is the easiest pasta dish I have ever made, if I am honest, and it is so quick too. We fried off some bacon in a pan and put a pot of pasta on to boil. Once the pasta was done and drained, we added in two very well scrambled eggs that were mixed into cream and parm. We then stirred that through, along with the bacon, and let the heat cook it. This was served with garlic bread and more parm to decorate. It’s so much lighter than mac n cheese but very tasty and delicious!

Tofu Rice Bowls

We made two different Tofu Rice Bowls, but both are made by chopping a block of tofu into cubes and coating them in corn flour. Then, we fried them off in a bit of oil and set them aside. For Robin and Amelia, we made Dann’s teriyaki sauce, and then thickened that up with cornflour. For Kai, Dann and myself, we made a gochujang sauce using gochujang, garlic, rice wine vinegar, sugar, honey and soy sauce, which then thickened up. We coated the tofu in the various sauce, then added it on top of the rice, along with sesame seeds and spring onions.
