This week’s bunch of recipes is really chicken heavy – and that’s due to a lot of our fish and beef meals being ones I have already featured on our blog! As the weather got warm, we went back to classic comforts, and had a lot of dishes we have previously had. Orange chicken is one we have had before, but I figured it would be fine to keep one repeat in the post. This week, Robin helped a lot with breakfasts and with one of the dinners, but otherwise we were pretty busy and looking for dishes that could be made quite quickly!
Orange Chicken and Fried Rice
Orange Chicken and Fried Rice is a big favorite in our household and Robin loves dipping the chopped chicken breast into egg and then into a 50/50 mix of flour and corn flour. This is then fried in vegetable oil, while a pot with orange juice, soy, garlic, ginger, brown sugar, sesame oil, and rice vinegar. We then make egg fried rice by scrambling some eggs, then adding in cooked rice, a bit of soy and some mixed frozen vegetables. It’s a very easy and yummy dish!
Spooky Tomato Soup and Grilled Cheese
This is a lighter meal on the list, but something that is simple and easy for Halloween. We heated up a tomato soup and then added in some sour cream, to create spider web soup! Then made some grilled cheese sandwiches and cut them with a spooky cutter to make a simple meal a little more fun for the holidays.
Soy and Honey Chicken Thighs
I was really excited to make soy and honey chicken thighs, which is a really simple recipe really. I pan fried some boneless, skinless chicken thighs in a bit of oil. Once they are cooked through, I then added a mix of soy, lime, garlic, ginger and honey into the pan, along with a bit of corn flour and let it all cook out. I served this with some steamed broccoli and rice. It was really yummy, could have made far more for leftovers!
Mini-Meat Balls and Pasta
Meatballs are something I had almost every week growing up. I make my meatballs with beef, bread crumbs, egg, Italian seasoning, parm, and a squirt of tomato puree. I then fry them off in oil before adding them to sauce. This cooks further while the pasta cooks, then once the pasta is done, I drain it and combine it all. It’s a simple and easy meal as well, and you could totally use pre-made meatballs. I served this with salad and a garlic bread.
Chicken and Chorizo Tray Bake
I forgot to get a picture of this tray bake, but it’s one that we enjoy the best. It’s a bunch of bone-in, skin on chicken thighs in a pan, covered in oil. Along with them, we half little potatoes, chop up some chorizo and add in some red onion. All of this gets covered in Italian seasoning, then baked until cooked through. I served this with broccoli.

The bone-in thighs are my granddaughter’s favorite. She’ll turn down any fast food to go home and have chicken and rice made.
