Midweek Meal Inspo; Shrimp Tacos, Spam and Rice, Steak Wraps and more.

Kai has been the picker-of-dinners lately, to support his fitness journey. He’s been working on his calories and protein aim, which means he often is finding foods that he wants to try. So, a lot of this week is random things Kai has asked for, with a few others mixed in. There are a bunch of different proteins to experiment with as well.

Chicken Caesar Pizza

Kai is on a fitness journey, so isn’t eating things like pizza and instead is being high in protein. At one point, a while back, I made chicken Caesar pizza, which he very much enjoyed, so we had it again! This is essentially a giant chicken nugget – which I get doesn’t look the best, but it’s minced chicken and then the spices you like. We used garlic powder and onion powder, a bit of breadcrumbs, and then shaped it into a giant circle. I then baked it in the oven, topped it with a layer of dressing an d of course, Caesar salad, which Kai really enjoyed. It’s an absolutely wild dinner though!

Shrimp Taco

Perfect for the warmer days we have been having lately, we made shrimp tacos. I cook some shrimp in a pan with salt and pepper and make up a coleslaw. This slaw can be put inside the taco or outside. I also give our kids a small amount of tartar sauce. They make their tacos with the slaw, shrimp and sauce, and eat them up! We had some waffle cut fries with this – it’s a very quick dinner and a fun one! You could season your shrimp more, but this is what our family likes.

Steak Wraps

Another meal chosen directly by Kai, this wrap was a take on Philly Cheese Stakes. We fried up some onions, peppers, and thinly cut steaks, and added in garlic powder, onion powder, paprika, and ground cumin. When the steak was cooked, we added a bunch of mozzarella cheese. These were then put into a wrap, and I had them with rice and salad. Kai had his as a rice bowl, instead of the tortilla shells, but they were pretty delicious.

Giant Stuffed Meatballs

I wanted to do something a bit chaotic, so decided on giant stuffed meatballs. This meatball was a 50/50 mix of beef and pork, with an egg, breadcrumbs, Italian seasoning, garlic powder, a little tomato paste, and a sprinkle of parm. I formed balls around cubes of mozzarella, but could totally have put more in. I then fried the meatballs in a bit of oil before baking them so that they were cooked all the way. I made some pasta, added in our favorite jarred sauce, and plated everything with a sprinkle of parm on top. We also had a salad and some garlic bread!

Spam and Rice

Amelia and Robin absolutely love teriyaki spam. It’s one of their favorites! So this time, we took the spam and cubed it up, before frying it in some oil and adding in Dann’s homemade teriyaki. I cooked some rice to go with it, as a rice bowl, and made some broccoli, which they both love overcooked. It’s a very quick and simple dish, but one that everyone enjoyed, though not as much as spam fried rice!
