We are full of energy this week, cooking up quite a few old favorites and new dishes to enjoy. Kai has been eating quite differently lately, with an increase in his calories, which has opened up the door for different meals. I have been enjoying my new pan set in the kitchen as well, which is always a plus. We’ve got some pasta this week, some meals that could easily be vegetarian, and some fun ways to add veggies to meals.
Spanish Tortilla
Kai has been eating more and mor eggs lately, so it seemed like the perfect time to crack out Spanish Tortillas! I use to make these when our children were younger. You basically just need to thinly slice potatoes and fry them in a bit of oil with some onions. Once the potatoes are soft, you can pour eggs into the pan until all of the potatoes are covered. This needs to cook through and set before you flip it, so the wet top becomes the bottom. It’s quick, one pan meal that is very filling! We served ours with a simple side salad.
Chicken Carbonara
Carbonara is such an easy meal, it’s perfect for midweek. This time, we grilled some chicken in a pan to go along with it! I boiled some pasta until cooked. In a jug, I added in two egg yolks, one egg, and a bunch of double cream. I scrambled them together, added black pepper, and added a bunch of parm. In a pan, I fried off some bacon. Once the pasta was done and drained, in the warm pot, I added in the jug of stuff, stirring quickly, and added in the bacon. This was served with a side salad and garlic bread.
Beer Battered Fish
Beer Battered Fish is something that Amelia has made a few times, as she is just so good at it! She batters seabass in a beer and flour mix, with some parsley added in, and then fries it in oil. We served it with some corn on the cob, asparagus, and some olive oil roasted potatoes as well. Fried fish is so quick and easy – one of our tips is to use paper towels to completely dry off the fish before dipping it into the batter.
Greek Chicken Feast


Greek chicken is another summertime meal that we crank out, especially when we have a bit of a later, larger meal after having a smaller lunch. Greek Chicken is pretty easy; we marinate chicken in olive oil, grated garlic, lemon, and then a bunch of herbs that we quite like. This gets put in a big skewer and broiled in the oven. We served our Greek Chicken with olives, tzatziki, hummus, garlic naan bread, rice, and some vegetables (this time zucchini, peppers and onions cooked in a bit of olive oil). It’s a family favorite and always a feast.
Loaded Gnocchi Mac n Cheese
Loaded gnocchi mac n cheese is something that I make for dinner parties, primarily. It’s as easy as melting butter, adding flour, and then milk and cheese to make a cheese sauce. We boil up our gnocchi, and combine the two. You can stop here, but we also grab a bunch of toppings and cook them up. I like mushrooms, chorizo, spring onions, and chili oil. Amelia often has pesto and tomatoes on hers. Robin is a big fan of siracha, more cheese and bread crumbs. Kai will literally add on any topping that is presented to him! This is a good way to get kids to try new toppings.
