We have been having more spooky or Halloween inspired food, as it’s such a fun time of the year. Along with these more labor intensive food, I’ve been making some Italian food that I find quick and easy. This week’s meals are a mix of both, so some classics everyone will love and some beautiful decorated spooky food that really will impress anyone who sees them.
Spooky Meatballs
I was inspired to be cute and spooky, so I tried making some spooky meatballs, two ways. Amelia doesn’t like cheese, so I made her some homemade meatballs and then wrapped them with puff pastry to create a mummy. I also took a bunch of meatballs, cooked them, and then put them on a baking tray. I then added a slice of cheese to the top of them. I feel that it might have come out better with some of those burger cheese slices, instead of real cheddar, but it did melt over the meatballs and became a sort of ghost! We served this over pasta with tomato sauce.
Chicken Parm with Pasta and Garlic Bread
Chicken Parm is something that always reminds me of eating at home. I breaded some chicken breasts in flour, then egg, then a breadcrumb mix of crumbs and italian seasoning. I then fried these off in oil. Then, I added a spoonful of tomato sauce to the top and a square of mozzarella cheese. I did over bake these slightly so the cheese is a bit too colored! I used the rest of the sauce on some pasta and heated some garlic bread too.
Creamy Chicken and Spinach Soup
Autumn screams soup season! After posting about our favorite soups, we all wanted to try out more new soups! This creamy chicken and spinach soup is based on the which chicken lasagna we have previously eaten. I cooked off some onion in a pot, then added in some chicken stock, cream, and shredded chicken. Before serving, I threw in a few handfuls of spinach as well. Like lasagna soup, I made a topping of mozzarella cheese and ricotta, to stir in. I cooked up some gnocchi to have as the pasta. Everyone really enjoyed this, which was fantastic as I had made up the entire recipe.
Spooky Burgers
Spooky Burgers feel very Pintrest Mom. I cooked beef burgers like normal and put them on slightly toasted buns. I then added cheese as teeth, a slice of pickle as a tongue, the other toppings everyone wanted under the burger… I then put some olives on toothpicks to make eyes and made slits in the burger bun, placing in tortilla chips to make wings or ears. These were served with chips and beets – it was a very fun time.
Calzones with Salad
Pretty easy meal, for our Calzones, we made some pizza dough but you can use store bought. Then I had everyone add the sauce they wanted (tomato or BBQ) and the toppings (Myself, Dann and Kai had chorizo and cheese in mine, Amelia had ham and pineapple, Robin had ham and cheese). Calzones are very customizable, allowing everyone to get exactly what they want. I then baked the calzones and served them with a simple Greek-inspired salad.
