This week was a bit more chicken heavy then previous weeks – but chicken is a big proteins that we often eat! We have made a bunch of different meals, mostly quick and easy food for our household. You can check out this weeks dinner ideas in this post, and hopefully it will help you plan some delicious meals for you and your family to enjoy!
Stovetop Nachos
We love nachos, and they make for a great midweek meal, especially as Kai can make them completely on his own. We started off by browning some mince beef, then adding in a can of refried beans (a new addition that Kai wanted to try). From there, we added in a splash of water, a packet of our favorite taco seasoning, and a bunch of grated cheddar cheese. Once everything was warm and bubbly, we poured it over two bags of tortilla chips, then Kai added on a bunch of sour cream, salsa and guacamole blobs. Adding the cheese into the meat mixture, for us, is much better then grating the cheese on top which then requires it to go in the oven to melt and also can get all hard when it cools. We had some sliced cucumbers and baby carrot sticks on the side of this.
Sausage Rolls with Vegetables and Rice
Sausage Rolls make for a good lunch or paired with a few sides, a filling and fun summertime dinner. We make these sausage rolls by taking puff pastry and putting a line of chorizo in it. We then add on some sausage meat. Sometimes, we fry up bell peppers, onions, and add seasonings to the meat too, but this time we just added the meat to the pastry as Kai wanted to make these on his own. Then, we roll the rolls, cut them into thirds, and stab the top before baking them in the oven. For the sides, Amelia chopped a bunch of vegetables; zucchini, red bell peppers and some broccoli, and added them to a pan with olive oil, salt, pepper, and armot seasoning. Robin was in charge of stirring and cooking them through. I also made some buttered rice to go with it.
Simple Chicken Tacos with Fries
Chicken Tacos are a pretty easy midweek meal. We cut our chicken breasts into bite-sized pieces and fried them in olive oil, with taco seasoning. In another pan, we fried bell peppers in olive oil. You can add some onions to this too, to bulk it out. We also had diced avocado, taco sauce and salsa for our tacos. For sides, we had some cucumber slices and curly fries. They were served with fries for a pretty simple midweek meal. We often go for beef tacos, but chicken felt like a bit of a change from what we normally have.
Classic Lasagna with Salad
We had a few rainy, cool days this week – which meant the oven was back in action! Amelia wanted to make some classic lasagna (we do a chicken lasagna too, which we called Cursed Lasagna, so this one is the classic). We mixed together ricotta, mozzarella, parm, an egg and Italian seasoning to make the white part of the lasagna. For the red sauce, we cooked some beef and added in a jar of our favorite tomato sauce. Then, we layered the beef sauce, pasta sheets, white sauce, pasta sheets, meat sauce, until we ran out. I covered the lasagna with tin foil and baked it in the oven, adding a bit of water to each side so that the pasta could steam. We served this with beetroot salad and garlic bread.
Chicken Burgers with Fries
Chicken burgers are such a quick and easy meal – and a simple one too. We butterfly chicken breasts and then pan fry them in olive oil. Someday, I’ll have enough room for a grill pan and grill these to make them absolutely perfect! These are then placed on a burger bun with some toppings that everyone can add. I tend to like tomato, but not a lot of our family does. We went with tons of avocado and pickles, along with mustard for me, BBQ for Amelia, Ketchup for Robin, Mayo for Kai, and hot sauce for Dann. We served this with air fried fries and some chopped beetroots.
