My Nanny will be mentioned often when it comes to cooking, as she was who got me into cooking. She use to make these Scottcheroos in the summer time, as a no-bake treat for us children to eat by the pool. We rarely had rice crispy treats, as instead these were served. I really loved her version of Scotteroos, but I would suggest being patient with it, as the recipe does take some time when it comes to spreading out the bars – this is something I found particularly challenging, but over time have gotten more and more okay at it.
Nanny’s Scottcheroos
A no-bake treat that everyone enjoys
Servings: 24 people
Ingredients
- 6 cups Rice Crispy Cereal
- 1 Cup Smooth Peanut Butter
- 12 oz Milk Chocolate Chips
- 12 oz Butterscotch Chips
- Bit of Butter to Grease Pan
Instructions
- Take a baking tray with a high lip around the edge and grease it with butter, set aside.
- In a large pot, melt peanut butter and butterscotch chips, string constantly.
- In a medium sized bowl, melt the chocolate chips in the microwave, putting it in for 30 seconds, string, then back in until melted. Once melted, set aside.
- Once the peanut butter/butterscotch is melted, take off the heat and add Rice Crispy cereal.
- Stir slowly. At first, it will seem like there isn’t enough coating – there is, trust me.
- Once combined, add half of the Rice Crispy cereal mix to your baking try. Smooth out to a thin layer using an offset spatula or similar. Again, this will feel like not enough – it is, trust me.
- Pour over melted chocolate, smooth out to a thin layer
- Add the other half of the Rice Crispy mix, spreading it out evenly as the top layer
- Put the treats in the fridge for an hour to set up.
- Cut into squares and enjoy. Store in an air tight container – I like mine chilled, right from the fridge.
Notes
This recipe takes about 20 minutes to make, then an hour to set. You can get about 24 squares from this, and it’s quite indulgent, so one square per person is perfectly fine.
