[Ad- gifted product] We are huge fans of Higgidy and have tried out a bunch of their foods previously, so when they sent us The Veggie Cookbook, we were pretty excited to see what foods they had instore for us. This cookbook’s goal is to get people to experiment more with veggies and cook with more veggies. These meals are all vegetarian, but some play more as side dishes and others could easily have your swapping out tofu for chicken, for example. It’s a really flexible book that has a bunch of staples, bigger vegetable meals, and more.
We took a look at The Veggie Cookbook and selected a recipe for Pickled Cucumber and Smoked Tofu Glass Noodle Salad, as we basically had everything for the recipe to begin with! This recipe was in the fast veg section, which has a bunch of filling meals that can all be made very quickly! The pickled cucumber and smoked tofu glass noodle salad is very easy to make, and it works well as a packed lunch to take on the go. These recipes are divided out well, so that you can see exactly you need for each section of the recipe itself.
Making the Tofu Salad (we used non-smoked tofu) was very simple, and the quick pickled cucumber was a really good new flavor to add into the dish. This salad threw together in about 35 minutes, though I do feel with practice I could have made it more quickly, and the serving size of four people for this amount of food really held up. These recipes do feel tried and tested, written by humans, that have fantastic flavors and could be adjusted to taste a bit different depending on what you like.
There are other sections of the book, like veg on the side, which are a bunch of fantastic side dishes that seem super fancy but obtainable. If you have a child that’s refusing vegetables or a dinner party to impress, these are the side dishes for you! Another area of The Veggie Cookbook called Veg Feast have bigger meals like whole roasted cauliflower or entire lasagnas, which can make for a more filling meal! There is even a dessert section, though, don’t worry, these desserts don’t all contain a bunch of vegetables!!
The Veggie Cookbook is ideal for someone looking for new, interesting recipes that contain vegetables or someone looking for some inspo for meat-less Mondays. There are lots of ideas, obtainable recipes, and plenty to really enjoy, with actual flavor too!

I love vegetable recipes, but some of them get way too involved. I love that these are simple and approachable.
