Vegan Cauliflower Wings

[Ad- gifted product] As apart of Veganuary, we are trying out some different recipes and vegan snacks to see how they are! One of our favorite vegan brands are OGGS, who make a range of snacks, along with an egg alternative called Aquafaba. This egg alternative works well as mock egg whites, whipping up just like them! Each carton contains about four eggs worth, which is plenty to bake with, use in recipes, cook with, and otherwise enjoy. I was very happy with the texture of these egg whites – and we went for a buffalo cauliflower recipe, complete with glaze, and a refreshing dip to go along with it. OGGS has plenty of recipes for Aquafaba, which you can find on their website, and we’ll be trying a few more things out this month as well!

Vegan Buffalo Cauliflower

Ingredients

Cauliflower Ingredients

  • 1 head Cauliflower cut into florets
  • 100 ml OGGS Aquafaba
  • 25 g Plain Flour
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 4 tbsp Sriracha Sauce
  • 30 ml Dairy-Free Milk

Glaze Ingredients

  • 50 ml OGGS Aquafaba
  • 1 tbsp Agave Nectar
  • 3 tbsp Sriracha
  • 1 tsp Paprika

Ranch Mayo Dip Ingredients

  • 50 ml OGGS Aquafaba
  • 1 tbsp White Wine Vinegar
  • 1/2 tbsp Caster Sugar
  • 150 ml Sunflower Oil
  • Salt and Pepper to taste
  • Squeeze of Lemon
  • 3 sprigs Fresh Dill chopped

Instructions

  • First, pre-heat your oven to 200 degrees Celsius (gas mark 6) and prep a baking tray with parchment paper.
  • Using an electric whisk, whisk the OGGS Aquafaba until it forms stiff peaks in the bowl.
  • In a separate bowl, combine all dry ingredients and add the siracha and milk. Whisk to combine.
  • Using a spatula, gently fold the whisked OGGS Aquafaba into the dry ingredients, until well combined.
  • Add the cauliflower florets to the batter and stir, make sure they are fully coated. If the batter deflates, that's fine, it's still very good!
  • Place the cauliflower, spaced out slightly, on the tray.
  • Bake the cauliflower for 20 minutes. Then turn them and bake for a further 20 minutes.
  • During this time, make the mayo dip! Using an electric whisker, whisk the OGGS Aquafaba until it is pale and frothy.
  • Add in the white wine vinegar and sugar and whisk for a further 30 seconds.
  • Slowly, pour in the oil at a height (creating a stream of oil, about the width of a piece of spaghetti) and continue to whisk the mixture, until it thickens and combines.
  • Season with salt, pepper, lemon and stir in the dill. This mayo is complete.
  • The glaze is just easy, combine the four ingredients and brush the mixture on the cauliflower once it is cooked. Then enjoy immediately.

This recipe wasn’t too hard to make, and the result was pretty delicious. You can, of course, add any hot sauce you want. The dip is really light and refreshing, a great hint of lemon in it, and it’s perfect to dip the wings into. I really liked the texture that this batter gave the cauliflower – I used my fingers to move them around in the batter, to make sure they were all covered in every nook and cranny. I also let mine crisp up a little, which was super lovely.

Dann was a fan of the spicy glaze, dipping celery into the leftovers and enjoying it. I found the glaze to be too spicy for me on it’s own, but added to the cauliflower it was a good, sticky glaze that went well on top. Over all, I found the OGGS Aquafaba to be a very good ingredient to cook with and whip up – and this recipe uses exactly one carton, which is perfect, really.     We love making cauliflower wings in our house. It’s one of our favourite dishes to bring when we’re invited to pot lucks and similar events. My husband loves the ‘bite’ that you get from the buffalo sauce while I tend to steer more towards honey garlic.
