Quick Vegan Grab-and-Go food with Higgidy

[Ad- gifted products] It is Vegnuary, so that means stores seem to have tons and tons of new vegan products for you to try and consume. Whether you are looking to take on the challenge of eating vegan food for an entire month, or just want to try some tasty, new treats, there is a lot of new options that are fun to explore! In our household, we tend to stock up on quick bites, things that can be made into a quick lunch or snacked on. After our lovely Higgidy Picnic in the summertime, we all were excited to see all of the new products from Higgidy, being highlighted at our local shop. We have compiled a list of our favorite, quick vegan grab-and-go foods!

Higgidy Porcini Mushroom & Spinach Vegan Rolls

Now, I am here to tell you that the Porcini Mushroom and Spinach Vegan Rolls is probably my favorite product from Higgidy. I love mushrooms so much, and these rolls are packed full of mushroom flavor. The added spinach bulks them out and they taste delicious. These rolls are something I look for and seek out, all year round. You can eat them cold or heat them in the oven, for just 15 minutes, and they are perfect. I also like the crunch of the seeds on the top of the pastery. Higgidy also have a porcini mushroom and spinach pie, which is equally as delicious as the rolls, but I prefer the bite sized nature of the rolls for this food.

Creamy Mushroom & Kale Pie

Following my love of mushrooms, the Higgidy Creamy Mushroom and Kale Pie is another really delicious mushroom-filled food. The Mushroom flavor itself isn’t as strong inside this pie, which might be from the mix of mushrooms in the middle, and the creamyness is quite lovely. It takes slightly longer to cook these in the oven, if you want them warm, but it’s well worth the wait. The filling is just enough to really pack the inside, and the kale itself isn’t overwhelming or too full of it – you do not end up with chunks of kale in your teeth or anything!

Higgidy Chilli Bean & Sweet Potato Pie

Dann is a big fan of the Higgidy Chilli Bean and Sweat Potato pie, which is another filling pie that doesn’t do too much of the crust. Instead, the top of this pie is actually tortilla shells, and there are a lot of beans and potatoes to fill it. It’s a really hearty feeling and filling pie – which is especially grate when it comes to something vegan to tuck into. Much like the previous pie, although it can be eaten cold, if you do want to heat it up it does take slightly longer than the rolls themselves. This pie also has a bit of a Mexican feel to it, which can be very fun!

Spinach & Roasted Tomato Vegan Quiche

When it comes to quiches, I am one that cannot actually eat egg yolks without feeling ill, so having a vegan alternative is always amazing. Dann loves quiches, and happily ate this one cold. It’s light, and the egg-like mixture in the middle does feel like a light egg. The spinach and tomato comes through well, and there is also quinoa throughout it, which adds a great texture and a good amount of flavor to it, while also making the quiche feel very filling. An entire one can easily feed two, and if you add some sides to it, it can make a lunch for four. It’s a great option if you are looking for a quick meal for two.

There are tons of other Higgidy vegan and plant-based options that can be found year round, but the selection this time of year is really quite lovely – so if you are looking for some quick vegan grab and go food, look no further.

    It helps to have food available sometimes that is quick and easy. I know my daughter and I would enjoy the mushroom and spinach rolls.

    Grab-and-Go can make a world of difference for busy moms like myself. I would love to try the Spinach & Roasted Tomato Vegan Quiche, and if I can get it straight from the box, even better.

    The mushroom and spinach rolls are what call out to me, so great news that you loved them. I’ve only tried meat higgidy products so far so I’ll keep my eyes open for some of these x
