Cooking with kids vegan scones

As vegan food is particularly big during the month of January, I dug out the book Cooking with Kids, which I got last year during it’s January launch in London. I didn’t have time to play around with the book then, but now that we seem to have tons of time on our hands, I dug it out! Cooking with Kids is a great book in the way that it is written – all of these recipes are easy to follow and you could probably hand them to a teenager for them to do themselves. Without having vegan in the title, all of the recipes are actually vegan, just by default, but the book itself is just designed to be one that you can use to get you and your family into the kitchen.

Cooking with kids has recipes for simple things like smoothies or more complex dishes like bibimbap, but each recipe has a side area which states when you should eat it (breakfast, lunch, snacks, dinners), how hard it is (shown in chef hats), how long it will take you to make it, and how many portions the recipe serves. The writing in the book is simple and big, easy for children to get involved, and the ingredients list is a shopping list – which is more understandable for younger ones. It’s just a well thought out book in itself.

Vegan Scones

Ingredients

  • 8 oz Self-raising Flour
  • 1 tsp Baking Powder
  • 1 1/2 oz Non-dairy Margarine Cold
  • 2 tbsp Sugar
  • 150 ml Non-dairy Milk (We use oat!)
  • 4 oz Dried Fruit` (We use raisins)

Instructions

  • Pre-heat your oven to 220 degrees C
  • Sift together the flour and baking powder in a large bowl.
  • Rub in the margarine with your finger tips until the mix resembles breadcrumbs
  • Add in the sugar and mix
  • Make a well in the middle of the dry ingredients and slowly pour in the milk, stirring with a spoon.
  • Once the dough is sort of together, add the dried fruit in and continue mixing until completely combined.
  • Flour a work surface and knead the dough for about five minutes.
  • Roll the dough out to the thickness of about 1 inch, then cut using a cutter into rounds.
  • Place the rounds on a greased and floured non-stick backing tray and glaze with a bit of extra milk for a shine.
  • Bake on the top of the oven for 15 minutes or until the scones are a deep golden color.
  • Set aside to cool and serve with jam!

This recipe was easy to follow and made some delicious scones. You can easily use dairy versions of the above ingredients as well, if you don’t have dairy free ones to hand. The recipe still comes out nicely! When it comes to the book as a whole, there is a section at the start on allergens, becoming vegan, and different replacements for various non-vegan items, which can come in handy if you are teaching a young one about becoming a vegan or are curious about being a vegan yourself.

I quite like how simple and straight forward this book is, as the recipes themselves are so easy to do and follow – it’s great for bringing non-stress cooking into your kitchen and is easy enough for children to follow, which is fitting considering the name of the book. I also like how the book isn’t a “vegan” book and instead is a cook book that happens to be vegan.

    Scones are absolutely amazing, I do prefer plain scones in fairness. I’m not so much of a keen lover of fruit scones. But you can’t beat a scone with Jam and clotted cream 😁

    This is really cool that they have a cookbook for kids and it is vegan. I am always looking for vegan/vegetarian recipes that are simple to cook. I went to the Cooking with kids link and it seems that on Amazon, the book is currently unavailable to buy. Hopefully, it will be available soon so I can purchase.
