Christmas cookies are just a part of the holiday season. We actually make cookie trays for our family and our local Pokemon Go Group for Christmas. There are tons of different holiday cookies out there, so a group of 12 bloggers got together to share their recipes! Hopefully these cookies get you into the baking spirit and you find the perfect Christmas Cookie to leave out for Santa.
When it comes to Christmas Cookies, I really like lemon cookies that have a bit of chew to them. I find that these types of cookies are fantastic for bringing a bit of lightness to the box. Ours came out a bit flatter this year than we expected, due to the butter being a little too soft, but that’s always a risk! Either way, they stay chewy for days and are nice to eat. These aren’t too difficult to make either and come together quickly, making them easy to make as a last minute Christmas treat.
Chewy Lemon Cookies
Ingredients
- 114 grams soften butter
- 230 grams sugar + 3 spoonfuls of sugar
- 1 egg
- 1 egg yolk
- 1 lemon all zest, 1/2 a lemon's juice
- 290 grams flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 pinch salt
- 3 drops yellow food coloring Optional
- 50 grams icing sugar
Instructions
- Pre-heat the oven to 160 degrees C.
- Combine your flour, baking powder, baking soda and salt in a bowl.
- Zest your lemon and add the zest into your dry ingredient bowl.
- In a stand mixer, add in your soft butter and 230 grams of sugar. Mix well until fluffy and combined.
- Add in one egg and one egg yolk, along with half the juice of your lemon and your food coloring if desired. Mix well.
- Once combined, add in your dry ingredients slowly until combined.
- Place the icing sugar in a bowl and the three spoons of sugar in another bowl.
- After the dough is mixed, take a spoonful of the dough and roll it in your palms to make a ball.
- Roll the ball into your white sugar bowl to coat.
- Move the ball to the icing sugar and do the same. Then place it on a baking tray lined with parchment paper.
- Bake in the oven for 15 minutes, until edges are slightly browned.
- Let cookies cool on the tray for at least 10 minutes before moving to a drying rack to finish cooling.
