Dann, Quang and I were all in Brighton for a work trip, to see a venue for a gaming event we are putting on in a few months. So, of course, we went out for a large early dinner or late lunch, depending on how you look at it! Quang, the master of finding places to eat, picked Kindling Steakhouse and Restaurant, which has a decent-sized, steak-centered menu. The Kindling Steakhouse and Restaurant has a few specials, that seem to rotate often, along with sharing specials if you are looking to split a big meal.
Sharing T-Bone Steak
We all decided to share a massive T-bone steak, which is 28 day dry-aged, sourced from Dedham Vale, Suffolk. It’s a fantastic cut of meat – well seasoned and well cooked. We found the sort of ‘top’ bit of the meat to this picture to be the most tender, with the bottom bit still being very delicious as well. We all very much like steak and this was, in fact, a good steak at a place that knows how to cook steak well. For our sauces, Dann and I both got Chimichurri, which had a lot of flavor, though we were recommended two and could have just had one, and Quang had the mushroom sauce which was creamy and very mushroom-y.
Two Salads


We decided to get a bunch of sides to go with our steaks! I picked out the grilled hispi cabbage, with fried capers and Caesar dressing. It had a lot of charred cabbage (in a very good way) and the salad dressing was thick and creamy – more of a dip. Dann picked out the lettuce salad, which had pickled radish, sun-kissed tomatoes, crispy shallots and walnuts. It was a very loaded salad which wasn’t super lettuce heavy at all. It felt like a very full of stuff salad, which is fantastic.
Macaroni and Cheese, Brisket and Jalapeno Croquettes, and Fries



Quang picked some more filling sides; starting with the macaroni and cheese, which had sage crisps and was topped with breadcrumbs. I do not feel that the sage added much to the dish, but it was very cheesy and very creamy! I enjoyed the sauce, which felt just right. I picked out some brisket and jalapeno croquettes, which had a little spice, but not tons. The beef taste was good, and they came with a tomato basil dip, which was pretty good and made the whole thing very tasty together. We also got some very well seasoned, crispy sweet potato fries!
Basque Cheesecake
Dann had to go off for a call, so Quang and I split a piece of cheesecake for dessert. We got a basque cheesecake with cherry coulis and a brandy snap. The cheesecake is basically a baked one, with a creamy center. It was delicious, though we both agreed it could have done with more cherry coulis! The brandy snap was a fun textural element as well.



Dann, Quang and I all had a fantastic time at Kindling Steakhouse and Restaurant – the staff was nice, the food was fantastic, and it was good to eat together so close to the seaside. I’d very much go back there again!
