This week is a mix of big meals, complex meals, and more simple meals! We had some chaos, some simple meals that the little ones could help with, and some that just gave me a bit of a break from cooking big meals. Hopefully this gives you some inspiration for your own menu creation for the week!
BBQ Chicken with Potato Salad
For our Monday girl’s night, Amelia and Robin both asked for BBQ chicken. I took a bunch of chicken breasts and marinated them in our favorite BBQ Sauce for most of the day, then baked them off in the oven. This is extremely simple. Along with the BBQ Chicken, Amelia wanted potato salad, which is as simple as boiling some potatoes, then adding them to a dressing of mayo, apple cider vinegar, chives, a little sugar, salt, and celery. We stirred this together warm, then let it cool in the fridge. We also served it with beats.
Roasted Ham and Sides
This big roast dinner mimicked Thanksgiving this year! We had roasted honey glazed ham, roasted carrots and parsnips, roasted potatoes, stuffing, green bean casserole, rolls, sweet potato casserole and broccoli with cheese sauce. We also had a bit of cranberry sauce and some turkey gravy, which was both pre-made. Though we live in England and they do not celebrate Thanksgiving, we took the time to have a huge dinner and talk about what we are most thankful for.
Loaded Potato Soup
Loaded Potato Soup is a soup that tastes like jacket potatoes! We baked a bunch of potatoes, then started making the soup itself. The soup itself starts as a rue – butter melted down with flour added to it. Then we start slowly adding milk and chicken stock, until you have quite a bit of soup. You’ll want to let that cook down, along with a handful or two of cheese, depending on your taste. We cooked some bacon separately, along with having a bowl of extra cheese, one of sour cream, and one of chives. Right before serving, you can add in your baked potatoes (scooped out of their skin) along with chives. We then let our children customize the bowls with the various toppings! It’s warm and delicious.
Chicken Parm with Pasta
Chicken parm is a really easy dish to make, and includes breading, which Amelia and Robin love doing! We make our chicken parm by butterflying our chicken, then dipping them in egg and then bread crumbs mixed with parmesan cheese and Italian seasoning. Then we fry them in a bit of oil and bake to finish them. When they are cooked through, we add a tablespoon of pasta sauce to the top and a slice of mozzarella cheese, and put them back in to melt. As a side, you can boil up some pasta and add the extra pasta sauce to them. We often also server this with a salad, but had some cucumbers and carrots that we ate on the side!
Taco Pizza
This pizza was in a Tiktok that Kai had shared with me, basically making a taco on top of a pizza base. So, we took some store bought pizza crust and popped it in the oven to cook about half way. Meanwhile, we heated up some mince beef until it was fully cooked and added our taco seasoning. Once the pizza base was half cooked, we added a thin layer of Taco Sauce as the sauce, then the meat, then our cheese. We used cheddar but you could use any cheese really! This all went in the oven until it was finished cooking off. I then topped the pizza with guacamole and salsa and cut it up! It tasted 100 percent like tacos and was in the form of pizza. You could add anything on top you’d like too.
