Midweek Meal Inspo; Broccoli Cheddar Soup, Alfredo, Honey and Soy Chicken and more.

It’s been another week of different foods, and so we have another Midweek Meal Inspo! There are tons of different foods we’ve had from more hearty meals like cheddar soup and lighter meals like a huge salad. Kai helped out with the chicken alfredo this week too, which is always a nice surprise. Dann and I got a bunch of rice noodles, so you will likely be seeing more of them in the near future.

Breaded Chicken with Alfredo

Breaded chicken is a favorite in our household. We butterfly some chicken, dip it in flour, then egg, then bread crumbs. They are then fried in a bit of vegetable oil, before baking off to finish. We made a quick and simple alfredo sauce out of melted butter, grated garlic, and then flour to thicken. We then added in primarily cream but a bit of chicken stock too. Once the sauce was pretty thick, we added in some parmesan cheese. Then added in our pasta. We served this with some Caesar salad.

A Huge Salad

Speaking of salad, Kai said he wanted a big salad, so we made some. I just combine two of my favorite salad mixes, then a bunch of ingredients. We picked one that had beets and spinaches, as well as a mixed greens. Then, we added in avocado, pearl mozzarella, red bell pepper, olives, artichoke hearts, some chopped up salami, chopped up ham, tomatoes, parmesan, crotons, etc. It’s basically every veggie we had in the fridge and then some meats to bulk it for a dinner. We have found that adding new vegetables into salads is a great way to get Robin to try them, as she just goes into the salad and tries to eat whatever is there, before deciding if she does like it.

Honey and Soy Chicken

Honey and soy chicken was a pretty quick and easy meal. We butterflied some chicken breasts, drenched them in flour, then fried them off in butter. Once they were browned, we added in some grated garlic, then some more butter, before adding in soy, honey, and cider vinegar. This created a sauce that thickened due to the flour. In another pan, I fried up a bunch of veggies; broccoli, mushrooms and baby corn. I also cooked up a few handful of the rice noodles, before combining it all in a stir-fry type dish. It was very good, and the sauce was a nice balance of soy and sweet.

Slow Cooker Beef Stroganoff

This recipe was extremely easy, which I did not think would work if I was honest! I basically took two cans of cream of mushroom soup, added in some sliced mushrooms and thinly sliced beef, and let it all cook in a crock pot. Once the meat was tender, I cooked up some rice and served it over rice. Though it was easy, there wasn’t a ton of depth in the flavor, but we all did enjoy it.

Broccoli Cheddar Soup

Broccoli cheddar soup is a very big thing in America, but not so much here. I took some broccoli and cooked it out in veggie stock, before blending it all up. I then added in some cream, cheddar cheese, and cooked my pasta directly in the soup. I also reserved a bit of broccoli to add in, for texture. It’s a pretty easy soup to make, and would be good with some crusty bread. It’s one of my favorites, though you really should eat all of it, due to the pasta being cooked in the soup, but it makes it an ideal texture!

    Great meal inspo again. I feel like I need to get the slow cooker out more often and prep some dishes that can be put on to cook through the day so they are ready when we get home. I love the sound of the honey and soy chicken.

    These sound like a lovely range of dishes to consider for weekday meals. I like the sound of the broccoli cheddar soup I bet that is really tasty.

    Jupiter, your Midweek Meal Inspo always gets me excited to try new recipes! 😊 The Breaded Chicken with Alfredo sounds divine, especially with that homemade sauce. And your Huge Salad is such a creative way to use up veggies! Can’t wait to see what you cook up next!
