Harlow Chinese School Cooking Course – Dumplings

The Harlow Chinese School Cooking Class have started back up for the year, with the first one being Dumplings! The first class of the school year was packed, with everyone creating either boiled or fried dumplings with a meat or vegetarian filling. Dann and I went with the meat filling, which had meat in it, along with a specific flavoring packet that is sort of like a seasoned soy sauce, but less liquid.

If you aren’t familiar with the Harlow Chinese School Cooking Courses, they are always run by Sun, who feels like an aunt or friend teaching you how to cook something from her soul. A big part of today’s class was actually practicing folding dumplings and rolling out the dough. This dough was a bit thicker than things like wontons, which is what makes it dumplings I suppose, so I wasn’t able to get a visually pleasing dumpling, but as I had been traveling so much that week, I was just excited to be in my hometown, with my friends, making delicious food. This class was full of new and old faces, so it was fantastic to see exactly what everyone else was making!

Sun did a great job of showing how to make it so that the dough that we were rolling out was thicker in the middle, so that they don’t rip, then filling the dumplings and pinching them shut was fun to do. Everyone got to decide if they wanted fried or boiled, with boiled dumplings needing to be more tightly made, so that they didn’t break. I went for fried as I really love fried dumplings. Our dumplings were taken and cooked, then brought back out to us to eat. There were a variety of dips; Chinese vinegar, chili oil, soy sauce, just to name a few. Though this year these classes are less focused on having a ton of different foods, I really enjoy the actual focus around the one that we are creating and am excited for the next one!

    I love hearing about all the great cooking classes you take. I’ve been cooking for my entire adult life, and these kinds of classes help me keep things interesting.
