Our house has been big on cookies lately! Robin is going through a phase where all she wants for dessert is cookies and milk, so we have been making butterscotch cookies, chocolate chip cookies and more. As Easter is just around the corner, I wanted to make some that felt like it matched the holidays. Mini Eggs are one of Dann’s favourite treats, though we haven’t been able to find many in big bags in the shops this year! This cookie recipe, though, can totally work with any sort of mix-ins you want to do. You just need to mix in the same weight as in the recipe.
Mini Egg Cookies
Ingredients
- 150 grams butter softened
- 80 grams light brown sugar
- 80 grams white sugar
- splash vanilla
- 1 egg
- 25 grams flour
- 1/2 tsp baking soda
- pinch salt
- 200 grams Mini-Eggs plus extra for topping
Instructions
- Pre-heat your oven to 190 degrees Celsius
- Add your butter and sugars into your stand mixer. Beat until creamed together.
- Add in your vanilla extract and egg, beat for a moment longer until combined.
- Add in your flour, baking soda and salt, slowly, while it's mixing.
- While it's mixing, beat up your Mini Eggs with a rolling pin.
- Add your Mini Eggs to the bowl and combine.
- Ball out your cookies – they will spread quite a bit – and put them on a lined baking tray.
- Press a Mini Egg or two into the top of each cookie.
- Bake for 10 minutes, until golden brown.
- Allow to cool on the baking sheet before transfering to a plate!
These cookies are super fun to make with your family – Robin and Amelia have loved mixing it together, creating the little cookies, and adding in the Mini Eggs! It’s a great starter recipe too, if you are just getting into baking, as you can add in whatever mix-ins you’d like.
These Mini Egg Cookies can last for quite some time if you let them cool completely before moving them into an airtight container. You can also freeze the dough before cooking it, in the freezer, to use it in the future – if you make a big batch and want them to be warm and delicious each time you make them! We have been dipping ours in milk, which has been very classic and delicious.
