Moist Pumpkin Bread

Autumn means pumpkin spice everything and after a few years of baking our own breads, I felt like pumpkin spiced bread would probably a fun thing to do this time of year. You see, read made with pumpkin is so moist, flavorful, and such a good time. I love having something that is crunchy on top of such soft, moist breads like this – so I made some pecan streusel to bake on top, but you can leave that out and just create the bread itself. The crunchy, nutty top is really good though, so if it’s something you might like, you should try!

Pumpkin Bread with Pecan Streusel

Course: Breakfast
Servings: 1 Loaf

Ingredients

Pecan Streusel

  • 5 tbsp Flour
  • 5 tbsp Unsalted Butter Melted
  • 5 tbsp Brown Sugar Packed
  • 3/4 cup Chopped Pecans
  • 1/4 tsp Cinnamon
  • 1/2 tbsp Vanilla Extract

Pumpkin Bread

  • 1 cup Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Baking Powder
  • 1 1/2 tsp Pumpkin Spice Mix
  • 1 1/4 sticks Butter
  • 1 cup Sugar
  • 1 Egg
  • 6 oz Pumpkin Puree
  • 1 pinch Salt

Instructions

Pecan Streusel

  • Combine all of the ingredients into a bowl. Set aside until read to put on bread batter.

Pumpkin Bread

  • Pre-heat your oven to 160 degrees C and line a loaf tin with parchment paper. Ensure your oven rack is in the middle of your oven, ready for when your bread is made.
  • In a large bowl, cream together your butter and sugar on medium speed.
  • Once just combined, add in egg and continue beating until very light and fluffy.
  • Add in the pumpkin puree and beat in until combined. Mixture might look broken at this point, it will come back together.
  • Add in your flour a little at a time, until mostly combined, then add in your baking soda, salt, baking powder and pumpkin spice as well as the last bit of your flour.
  • Continue mixing until all combined.
  • Pour batter into your loaf pan and flatten out. Then pour over your streusel as a topping. You can swirl a bit in, if you'd like!
  • Bake for an hour to an hour and a half, checking to see if the bread is baked fully yet.
  • Allow to cool and serve!

This pumpkin bread recipe itself is actually quite easy and one of these fool proof ones, where you can’t really mess it up. It’s a great for a fun Autumn feeling breakfast or for a bit of a snack to go with your coffee, hot chocolate, or any hot drink you might enjoy.

    My boys are already asking about what yummy things we can make with our pumpkins this year, so we are going to have to try this. Especially with that pecan streusel on top!

    Okay, I need to try this! I love a yummy pumpkin bread and have a great recipe with chocolate chips, but I haven’t tried it with a streusel toppings. I bet I’d love this!
