Harlow Chinese School Cooking Course – Sesame Prawn Toast and Satay Sticks

Dann and I absolutely have loved the last few cooking classes we attended at the Harlow Chinese School! This was the last cooking course for the school year, so we were excited to learn how to make some Sesame Prawn Toast and Satay Sticks – and there were some surprise side dishes that we got to have as well. This cooking course is really casual with a big focus on fun and exploring new foods. Sesame Prawn Toast and Chicken Satay Sticks are really classic party food in England, so it was fun to make our own.

Sesame Prawn Toast

This was a very simple, three ingredient recipe. First, Kitty – our Prawn Toast expert – showcased how to mince raw shrimp using a big knife. She squished them with the side of the knife and then mashed them with the back of the knife, before adding them to a bowl with salt and pepper. We then took the prawn mince and spread them on a bit of toast. Thick cut is the key here! Before placing it prawn side down into a bunch of sesame seeds until it sticks. They then took the toast and fried it in vegetable oil. I do feel this would have done well with a dip of some sort – maybe chili oil, but shrimp is really not my thing. It was so easy and quick to make though – I am sure this is an app that people will be making at home instead of buying frozen going forward.

Satay Sticks

The chicken itself was already marinating over night, however, Sun – our Satay expert – let us know all about the ingredients that you need to marinate your chicken in. We were then given a bunch of soaked bamboo sticks and were able to ribbon our chicken on to the sticks. These were then taken in to fry and we learned about the sauce that was made with peanuts and curry powder, along with some other ingredients. This sauce was very delicious – and I am not a big peanut lover myself. Both of these recipes were very simple to make and we cooked them quickly!

Bonus Side Dishes

Sun also made a lovely, refreshing salad that had rice noodles, lettuce and carrot, along with a dressing that she told us all about. This is her family salad – the one that she makes for her family. She also made a bunch of rice to go with our little treats, which were very filling and a nice addition. Whenever we go to any of the Harlow Chinese School Cooking Courses, we always leave full of new food, skills and have a fantastic time. The community there is fantastic and it’s so good to learn about this new food.
