Then, it launches into breaking down several points – from the financial gain of cutting down on meat, to how it would impact the planet, to how much good it would do for your body. Then, Keith’s Favourite Vegan Recipes is full of recipes for soups, sides, mains, desserts, and even condiments. All of these recipes are quite easy to follow and seem to come together quickly – the ones with written introductions to them really set the scene. We tried out a Creamy Courgette Soup, as we were feeling quite in the mood for it!

Creamy Courgette Soup

Ingredients

  • 1 tbsp Coconut Oil
  • 1 Onion
  • 2 Garlic Cloves
  • 1/2 tsp Ground Paprika
  • 1 Medium Courgette
  • 1 Medium Potato
  • 650 ml Vegetable Stock
  • 1 tbsp Fresh Parsley
  • 1 tbsp Soya Cream

Instructions

  • This is one of those recipes where you want to get your prep done first! Take your onion and peel it, then slice it. Set asside.
  • Peel and dice your potato, dice your courgette. Smash your garlic cloves.
  • Grab a medium sized pot and heat your coconut oil on medium heat. Add your onion and garlic and cook for a few minutes.
  • Add in your ground paprika and continue cooking for about a minute, until fragrant.
  • Add in your potato and courgette, as well as the stock and bring the soup to a boil.
  • Once at a boil, cover the pot and simmer for about 15 minutes.
  • Now that everything is cooked through, you can process your food using a food processor or stick blender.
  • Use your fresh parsley and soya cream to garnish the dish.

Keith’s recipe for a Creamy Courgette Soup came out as a light and delicious soup. You can actually taste the coconut oil throughout – which adds a lot of depth and dimension. Dann and I really enjoyed it – this recipe is perfect for two – and we even made some for Kai and Amelia to try. They also enjoyed the soup, and they are quite picky eaters! We were very impressed with how simple these recipes are – they aren’t lengthy cooks and they use a lot of ingredients that you will probably have out and about.
