Every month, Amelia and I go to a little cupcake decorating class, which is ran by Sweet Designs by Jennie! These classes follow different themes, many of which are new, and the latest (and current most popular one) is Highland Cows. Amelia and I were very excited by this new theme, as we both love sculpting in fondant and the cute designs were very interesting. We go together as a mother-daughter activity, which is so much fun, and we always end up with a bunch of lovely cakes to bring back home to the rest of our family to enjoy.



The Highland Cows cupcake class started off like many of the others – the cupcakes are already baked, fondant portioned, and everything was placed out nicely in front of us. We started off the class by making the little blue circle toppers, as these need to set up, decorating them and creating the little flowers. A lot of these were techniques that we have previously done, due to the amount of classes we have taken. The wooden texture mat returned, which I very much liked rolling onto the brown fondant, which became a fence and a sign. There was a lot of free-form cutting in this class, so it’s interesting to see how everyone’s stuff came out.



Making the little flowers (there were two sizes and three colors) was also a lot of fun. These little flowers are a staple in Sweet Designs by Jennie’s classes, to be honest. The Highland Cows Cupcake Class did have a new piping technique. After we had piped on a bunch of grass and put on some of our toppers, we got to pipe some Highland Cow faces. This was done through a new piping tip – we made short, grass-like parts to the cupcake, then longer swooshing parts. It was a lot of fun and very much a trust the process type of thing.



Amelia’s favorite thing to do was creating the 3D Highland Cow out of fondant, which she added cheeks to (and I copied) creating some adorable little cows. I do like how Jennie is able to break the 3D figures on cakes into different parts, that makes them all very easy to actually create. This is another one of those trust the process types of moments, but I do like how mine came out. The classes themselves are on the smaller side, with just 6 people in each one, so it feels like a fun little group – always talking about our days and updating each other on what we’ve been up to. We did have a new person in our group this week, who fit right in! The cakes came out so adorably, and they are quite delicious too.
