Midweek Meal Inspo; Big Mac Wraps, Pizza Bread, Corn Dog Bites and more

I feel like when the summertime rolls around, I am always inspired to do more cooking and eat more fun foods. This week felt very much like a week of fun things that were fantastic to eat, very kid friendly, and just a lot of fun.

Big Mac Wraps

I feel like this went viral a few years back on Tiktok – it’s taking a wrap, pressing some mince beef into it, then frying it off. I topped it with cheese, tomatoes, lettuce, pickles, and homemade burger sauce. It’s just a way to make burgers a little different! We had ours with fries and beets, which are classic side dishes in our household.

Pizza Bread

Pizza bread is exactly what it sounds like! We got a giant loaf of Tiger Bread and split it in half. We have had a lot of days with friends over, and this feels perfect for a group of children as I had them each decorate their bread with some pizza sauce, pizza cheese, and then whatever toppings we had; mushrooms, ham, chorizo, pineapple… I then put them in the oven with the grill setting until the cheese was melted and the top toasted. This was served with salad.

Corn Dog Bites

Corn Dog Bites are a really fun way of having a corn dog! I make up my favorite corn bread recipe, and then dip hot dog chunks (that are patted dry) in the corn bread. I then fry them in vegetable oil. On the side, I made potato salad and had a bunch of vegetables from our fridge; cherry tomatoes, cucumber and beets. This one went down well with everyone to, and gives big fairground vibes.

Chicken Cesar Burgers

Another twist on a burger, I got some chicken mince, mixed in seasoning like garlic powder, Italian herbs, and pepper, then formed burger patties which I cooked in a pan. I took some buns and buttered the inside, adding in garlic powder and Italian seasoning as well. This burger was then served with a healthy amount of Cesar Salad kit, from Tescos which is our favorite (we just left out the croutons), alongside some tatter tots and beets.

Creamy Meatball Pasta

I wanted to do a pasta dish this week, but one that was easy. This pasta dish had me making meatballs by seasoning mince beef with fresh garlic, worcestershire sauce, fresh parley, salt and pepper. I fried them off in a bit of olive oil, then added in tons of chicken broth once it was nearly done. I added the pasta in directly, along with a cup of tomato sauce. This then all cooked down until the pasta was done, then I added in some double cream and a handful of parm cheese. I served it with garlic bread and salad.
