[Ad- gifted product] I’ve been lactose intolerant for as long as I can remember. But, I also love mac n cheese. I am one of those people that will eat mac n cheese and just feel terrible for the next few hours, just so I can enjoy the food I am craving from time to time. In trying to actually listen to my body, I made some mac n cheese using the Violife Epic Mature Cheddar Flavour block, which is a vegan cheese!
I actually made mac n cheese as a side for lunch, testing it out with all of the family, without telling them it was a vegan mac n cheese. Mac n cheese is pretty easy to make. First you boil up your favorite pasta. While that’s cooking, you can add a tablespoon of vegan spread to a pot, and let it melt. Once it is melted, you can add two tablespoons of flour and whisk until it forms a paste. Let this cook off for a moment, then slowly start pouring in your choice of milk, whisking to get rid of lumps. Once you have a thick and creamy sauce, you can grate the Violife Epic Mature cheddar flavour block into the sauce, to create your cheese sauce. We add paprika and garlic powder to our mac n cheese, to give it some flavor. Once the pasta is done, drain it, and add it into the sauce!
We severed ours with mushrooms on the side, as Robin and Amelia wanted mushrooms but Kai did not. The mac n cheese went on everyone’s lunch plate and we dug in, allowing everyone to try it before we told them. Kai said it was a very delicious mac n cheese but tasted a bit like a new cheese, because it was so creamy. He said he liked it loads and wanted more of it. Robin and Amelia had a similar reaction, though they did not pick out that it was a new cheese, and Amelia declared it her favorite mac n cheese so far. Amelia doesn’t love sharp cheese flavors and often finds milk cheese to be too strong and overpowering, so having this milder cheese was very good to her! Robin stirred in her mushrooms and cleaned her plate. Dann and I really enjoyed the mac n cheese too – so much so that I made some more the next day, as the block can make several batches.
When it comes to grating, the Violife Epic Mature Cheddar flavour block acts softer then a milk based mature cheddar block, as it’s softer and does not quite crumble. It’s creamy though, and when added to the sauce, does make it very creamy in texture which is ideal for a mac n cheese. I can see this brick being a staple in our home, especially as I often want mac n cheese without feeling like garbage after eating it. The texture is really spot on, and the flavor is so good too. Dann says he’d like it a little stronger, but I prefer this lighter taste than the cheddar he normally picks out. You can find more vegan recipes through Violife.
