Three Delicious Ways to use Fresh Strawberries

[Ad- gifted product] Recently, we went along to Cammas Hall to get some freshly picked strawberries! All of us very much like picking out the perfect berries and loading up far too many into a basket, often with tons and tons left over. This year was no different with many, many strawberries. Here are three ways that we use fresh strawberries to make treats.

Strawberry Jam for Scones

Every year I make a bunch of jars of strawberry jam! Cammas hall sells pectin sugar, which I always find to be the perfect way to make jam. I just heat up equal parts sugar and strawberries, by weight, along with a tablespoon of freshly squeezed lemon juice and let it all cook down until it’s jam-like. Robin has been devouring peanut butter and jelly sandwiches with homemade strawberry jam for the last week, but another fun use for jam is scones. Classic jam and scones are always a must this time of year as they just match the sunshine. Wright’s Scone Mix is super simple to use – just add water, kneed, and then cut them to bake them. They are perfect every time! We had a big scone afternoon tea which Amelia and Robin both enjoyed.

Strawberry Cake

Amelia very much enjoyed this easy strawberry cake, which was simple enough to throw together. I followed Sally’s Baking Addiction’s recipe for Strawberry Bread and made it in a cake tin, to create a thin cake. I then made up some glaze to drizzle on top of the cake. It came out very fluffy, refreshing, and such a good use of strawberries without being over-whelming strawberry.

Strawberry Basil Drink

We often like to have a good drink in the summertime sun! It’s easy to muddle together a few strawberries, a couple of torn basil leaves, a squeeze of guava nectar or honey and a splash of line with a shot of vodka to create this drink, poured over ice. I do this very much to taste, as sometimes hand-picked strawberries are so much sweeter than the ones you find at the shops, so you can easy decide if you want more nectar or more lime to balance it out.

These are great ideas for using strawberries! I recently made a strawberry and watermelon jam for a cake, and it was so good.
I also just made an iced strawberry matcha latte yesterday, and it was delicious too.
